So what do you make when you feel like having a feast but cannot because you are on a 1200 kCal diet plan ?
This Lemon Chicken is the way I binge without upsetting my fitness routine. This recipe originally belongs to my sister-in-law , so she deserves all the praise for it.
It’s a super easy recipe (You know I am a lazy cook).
Prep and Cooking time is 20 minutes combined. (Amazing na!)
And Zero Oil added ! ( Can you imagine ? )
So here we go with the recipe .
Ingredients: (serves 3)
Quick Marinade
- Chicken leg (with bone) : 9 pieces (almost 700 gm)
- Ginger (finely grated/ paste) : 1 tbsp
- Garlic (finely grated/paste) : 1 tbsp
- Curd : 1 cup
- Lemon Juice : freshly squeezed 3 medium sized lemons
- Orange Juice : fresh juice of 1 orange
- Salt : to taste
- Red Chilli powder : 1 tbsp
- Turmeric : 1 tsp
- Black Pepper Powder : 1 tbsp
In the Pressure Cooker
- Black Cardamom (Badi elaichi) : 1 in number
- Cloves : 3-4 in number
- Black pepper corns : 1 tbsp
- Garam masala : 1 tbsp
- Ginger (finely grated/ paste) : 1 tbsp
- Garlic (finely grated/paste) : 1 tbsp
- Green chillies : 2 (slit length wise)
For Pickled Onions
- Onion : 2 (sliced in circular rings)
- vinegar : enough to soak onions
- salt : 1tsp
Method:
- Rinse and clean the chicken peices thoroughly.Pat dry. Make 2-3 slits per piece.
- In a large bowl , combine curd and other ingredients mentioned in the quick marinade list along with the chicken.
- Massage the chicken well.
- Its a quick marinade , 10 minutes of marination time is enough. If you plan to keep it longer , then cover and refrigerate.
- Keep aside the onion rings dipped in vinegar and salt.
- In the pressure cooker add marinated chicken, black cardamom, black peppercorns, cloves, garam masala , ginger, garlic and green chillies.
- Pressure cook for 8-10 minutes or till 1 whistle.
- Strain the excess vinegar from the onions. Once the pressure releases, add the pickled onions and stir.
- Serve hot.
I prefer to have the chicken alone for dinner to avoid carbs, but you can have it with rice or roti also.
Happy eating.
