Instant Ragi Dosai |Breakfast |Snack |Toddler Meal Ideas | Finger Food Series

I have long been waiting to lay my hands on Ragi or Finger Millet Flour , which was rather difficult to procure even in my urban settings.

Ragi or nachni is a healthy flour alternative which is fibre rich , hence aids in digestion. It is also gluten free, and highly rich in calcium , iron and other minerals.It can rightfully be called a ‘wonder grain’.

Here is a delicious, nutritious and quick recipe of Instant Ragi Dosai / Pancakes which are perfect for your growing toddler.

Instant Ragi Dosai |Toddler Meal Ideas

Prep Time : 30 minutes

Cooking Time : 2 minutes

Yield  : 20 mini dosai / 6 average sized pancakes

Ingredients:

Half cup (1/2) Ragi flour / finger millet flour

Half cup (1/2)  Rava / Suji/ Semolina (You can use rice flour instead of this, if making gluten free)

Quarter cup (1/4) almond flour (optional – you can replace it with Rava/Rice flour)

Half cup (1/2) curd

1 teaspoon chopped ginger

1 tablespoon chopped onion

1 tablespoon chopped coriander

salt to taste

One and half (1.5) cup water

for tempering –

1 tablespoon ghee + extra for cooking pancakes

1 teaspoon mustard seeds

1 teaspoon cumin seeds/ jeera

1 teaspoon chopped curry leaves

Method :

In a mixing bowl, take ragi flour, rava , almond flour, curd, chopped ginger, onion, coriander leaves and whisk well. Add enough water to make the batter runny, usually 1.5 cup is enough.Let it rest for 30 minutes atleast.

In a kadhai, prepare tempering with ghee. Add mustard seeds , cumin seeds and curry leaves and cook it till you hear spluttering sound. Pour this hot tempering into the batter.

Add salt to the batter according to taste.

Take a non stick Dosai pan / Mini Utthapam pan/ any pan you use for making cheela. (I have used Nirlon Mini Utthapam pan – very convenient to make mini pancakes : Buy it here!)

Grease it with ghee and put on medium high heat.

Pour the batter and sprinkle some ghee on the edges of the pancake.

Cook on first side for 1 minute and when it appears set, flip and cook the other side on medium high heat for under a minute.

Ragi Dosai / Pancakes are ready to be relished.

Notes:

Almond flour is an excellent way to add the goodness of badam/ almonds specially for toddlers who cannot consume whole dry fruits. You can use it in any recipe to replace conventional flour by just increasing the water content in the dough for better binding.
